Party Potatoes

If you have been to my house much, you've probably had these. They are fantastic and a favorite of many. My mom made a bunch for us when she was here, so I thought I should share the recipe. very easy and verrryyy good :)
Party Potatoes

Prepare 12 servings of instant mashed potatoes according to directions
Add to mixture:
1 8 oz package of cream cheese (softened at room temperature)
1 C (or 8 oz) sour cream
1 1/2 tsp onion salt (which I can never find, so I do half garlic salt and half onion powder) if you find it somewhere tell me!

Blend until well mixed. Put into a greased large casserole dish. Top with small chunks of margarine and sprinkle with paprika. Refrigerate if not baking right away.
Bake at 350 degrees for 1 hour or until hot and bubbly. (can be less time if it's not coming out of the refrig.)

Happy Birthday Joseph Elliot :)

Happy 27th Birthday to Joe on March 23~~

Though Lucy and I were under the weather most of the week, we still had some nice times together and a fun little party at Joe's parents on Saturday.
Joe got new hockey skates from both sides of the fam, a ND shirt, hockey socks, new running shoes and gift certificates to La Spiaza :)

1 month

Here's a quick post with Lucy's 1 month (5 weeks - oops) photos!

She is getting more and more alert, looking all around and staying awake longer during the day as well.

I have had the stomach flu and she seemed affected by that as well, but we both seem to be on the road to recovery, so that is good. Don't like seeing the little lady not feeling well :(
Mom and Dad come to see us tomorrow a.m. and then they head to Israel, please pray for safe travels for them and safety as they are there as well.

Porch + Lucy :)

My parents helped us get a wicker love seat for our front porch - we also got a matching coffee table (all from a local antique/used furniture store in downtown wheaton) and added it to our glider. Also using the glider cushions on both pieces to tie it together. We can't wait to use it all spring, summer and fall!!

Happy St. Patrick's Day :)

Visitors!

We have had lots of visitors the last few weeks who have gotten to see and hold little Lucy. It's been so fun to introduce her to friends, family, church people and youth group kids :) She is very loved but we're hoping the kids don't love her too hard and share their germs.... :)

We also LOVED having my mom come stay from March 8-11. We had so much fun going on walks with Lucy to downtown Wheaton, checking out resale shops, going to starbucks and to brunch, having help with the house, dishes, she did it all and we miss her LOTS!! BUT maybe she will come again soon?? :)

These Days...

Hey guys, sorry for the lack of posting, I only have a computer after Joe comes home at night :(

Lucy is doing well - we've just been running a lot of errands together, having visitors, eating, sleeping and now Grandma is here to spend time with us until Friday! So we were walking all around Wheaton today, stopping at shops and Starbucks :)

Lucy has been eating every 3 hours since the hospital, so that is good and going longer most nights, more like 4-5 hours. Though she struggles sleeping through the first shift of the night, 10pm-12:30am or so...any suggestions?
She's such a sweetie, not a fussy girl and happy most all of the time, very thankful!
